Food from the sea – green algae as new sea truffles
Blue Center Gotland is working on the potential of algae in the food sector.
Blue Center Gotland who is SUBMARINER Network member, is a research station in the Northern part of Gotland, it is a common project of the Uppsala University, the County Board of Gotland and the Region Gotland. The center is dealing with development issues around water as a resource (on land, on the coast and in the sea). The location of the Center is unique between sweet and brackish water, the Center functions as a regional knowledge center working on incubation operations with enterprises, public authorities and entrepreneurs.
Current research includes growing of Ulva intestinalis (green algae) also known as sea lettuce. The project is led by Gunilla Rosenqvist who is also project partner in GRASS. The lead partner of GRASS, Fredrik Gröndahl (KTH Royal Institute of Technology) when visiting the Blue Center Gotland confirmed that there are several cooks who use this alga type (Ulva intestinalis) in preparation of food. With this research work, the researchers at Blue Center want to attract local entrepreneurs to snatch on the topic and undertake concrete actions to increase usage of algae production within the food sector.
